1. Equipment Introduction
The beer fermentation tank is one of the main equipment on the beer production line. It is mainly used for early fermentation or late fermentation of beer brewing, and it can also complete the work in one tank (one-pot brewing process).
The fermentation tank is mainly composed of a barrel, an upper head, a cone bottom (referred to as a cone tank) and other parts. The bottom is tapered and the angle is 60~90°. The tank is equipped with a cooling jacket, and the cooling capacity can meet the requirements of the beer cooling process. The tank body is equipped with 1 to 3 cooling jackets, which are designed according to the size of the tank body. A set of cooling jacket is set at the conical bottom. This structure is conducive to the precipitation and preservation of yeast. The fermentation tank is a sealed tank, which can recover carbon dioxide or wash with carbon dioxide; it can be used as a fermentation tank or a storage tank. The fermentation tank is equipped with a good thermal insulation structure, and the tank body and the cone bottom have thermal insulation layers to reduce the cold in production. Insulation material, generally choose polyurethane foam.
The tank is equipped with: CIP spray ball, thermometer, sample valve, pressure relief valve, pressure gauge, manway, outlet valve and other functional components.
2. Principle of Use
The fermentation tank is used for beer fermentation, the fermentation period is short, and the fermentation speed is fast. The reason is due to the liquid fluid dynamics and the modern beer fermentation technology. After yeast inoculation, the density of yeast cells at the bottom increases due to the accumulation of yeast, which speeds up the fermentation and produces more carbon dioxide during the fermentation process. At the same time, due to the height effect of the static pressure of the fermentation broth column, the CO2 content also changes gradually with the number of layers, and the density of the fermentation broth also changes gradually. In addition, because there is a cooling device outside the tank, the temperature at each stage of the fermentation can be controlled. In the static pressure difference, the density difference of the fermentation broth, the CO2 release function and the temperature difference (1~2℃) produced during the cooling of the tank top, under these impetus, the liquid in the fermentation tank produces strong natural convection, which enhances the yeast and fermentation The contact with liquid promotes the metabolism of yeast, greatly accelerates beer fermentation, and significantly shortens the beer fermentation cycle. In addition, because the inoculation temperature, beer fermentation temperature, diacetyl reduction temperature and yeast inoculum are increased, the yeast fermentation speed is accelerated, so that the fermentation can proceed quickly.
